What Does HRC Mean on a Knife?
HRC is the Rockwell C hardness scale — the standard measure of knife steel hardness — and kitchen knives typically run 56-64 HRC, with German knives around 56-58 HRC (tougher, easier to sharpen) and Japanese knives around 60-61 HRC (finer, longer-lasting edge that chips more easily).
The trade-off behind the number
Rockwell hardness measures how far a diamond indenter penetrates the steel under load — a higher number means harder steel. Hardness buys edge retention: a harder blade holds a fine, acute edge longer. It costs toughness: harder steel is more brittle, less forgiving of bones, frozen food, and glass boards, and takes more work on the stone.
That single trade-off explains most of the German-vs-Japanese divide. The Wüsthof Classic's X50CrMoV15 at 58 HRC and the Victorinox Fibrox Pro at 56 HRC shrug off abuse and re-sharpen easily. The MAC MTH-80 at 60-61 HRC and the Tojiro DP's VG-10 at 60 HRC take a keener edge and hold it longer, but demand more care.

What HRC should you buy?
If you want a forgiving knife you can maintain with minimal fuss, stay in the 56-58 HRC band (Wüsthof Classic, Victorinox Fibrox Pro). If you value maximum sharpness and will hone regularly, hand wash, and sharpen on a whetstone, the 60+ HRC band (MAC MTH-80, Tojiro DP) rewards the effort. Above 62 HRC (SG2/R2), edges are exceptional but chip resistance drops to low-moderate and sharpening rates hard — enthusiast territory.
